Almond 'milk' is a blended beverage of pure water and fine almond crumble, often a milk substitute for cow or goat milk. Lecithin, such as from sunflower seed or soybean might also be added to keep the almond and water from separating, which can be a pain. You can purchase almond milk already perfectly blended or you can make it yourself.
I have to use it for milk sub and it's my favorite because I am almond crazy but this is a light drink with all of the goodness of almond instead of the whole almonds. I like soy milk but I can only have this at times and not regularly; I have good personal reason to not use much soy.
